Use gochujang to enhance your dishes with a little smokiness, heat, and umami. Famous Korean dishes such as bibimbap, tteokbokki, ssamjang, and soondubu jigae, all use gochujang as one of their main ingredients.
Gochujang 고추장 is a Korean red pepper paste made from fermented soybean, chili powder, glutinous rice, malt powder, and salt. It’s been a staple in Korean cooking for centuries and comes in different heat levels, from mild to extremely hot.
Put gochugaru honey, water, and miso paste in a pot.
Stir until mixture bubbles, then turn off heat and let cool.
Stir in remaining ingredients and transfer to an airtight container.
