Sweet Potato Chorizo Soup
It’s been an awesome summer! Aside from truly enjoying the work I’ve been doing, I just love the endless string of sunny days and balmy nights.
While summer still has a little fight left in her, like it or not, autumn is approaching. I can see it in the slight change of color on the tips of the leaves just outside our brownstone. Fall brings it’s own excitement!
I love walking outside on the first day that calls for a long sleeve shirt.
And the in-season ingredients at the local grocery store start to change as well. This sweet potato chorizo soup recipe is healthy enough for bikini season, but has a comforting and hearty element.
I knew this sweet potato chorizo soup was going to be a hit when I texted a pic to Ben who was out for the day.
He’s not a big fan of sweet potato soup generally, but I didn’t tell him what it was. His immediate reply was, “Instagram now!!!” Promising start.
When he returned later that afternoon, he barely said hello to me or the kitty. It was straight to the soup-pot on the stovetop to sample the goods. With a spoon in hand, and a beatific smile on his face, he said. “This is my new jam. It tastes like Spain.”
That taste of Spain he was referring to in this sweet potato soup was definitely the chorizo. Spanish chorizo is typically made with pimentón (a smoky Spanish paprika).
The chorizo in this recipe is blended directly into the broth – so not only are the sausage’s smoky and peppery elements present, they’re omnipotent! Jalapeño pepper, onions and garlic are the perfect bouquet to round out the flavor in this sweet potato chorizo soup, and counteract the natural sweetness of the sweet potatoes.
Seriously, if you didn’t already know there were sweet potatoes in this recipe, I doubt you’d guess it!
Aside from a long list of sweet potatoes’ health benefits, they bring a gorgeous fall color palate to the dinner table. And sweet potato soup is a super easy dish you can add to your busy school-night recipe arsenal this season.

Description

Ingredients
- 2 tablespoons extra virgin olive oil
- 2 cloves garlic (minced)
- 1 jalapeno pepper (roughly chopped)
- 1 small onion (peeled and roughly chopped)
- 5 ounces chorizo (chopped bite size)
- 2 medium carrots (roughly chopped)
- 2 stalks celery (roughly chopped)
- 1 pound sweet potatoes (peeled and roughly chopped)
- 5 cups vegetable or chicken broth
- 1 teaspoon curry powder
- 1/2 teaspoon paprika
- a few cilantro sprigs to use as garnish
- salt and pepper to taste
Instructions
- In a large pot over high heat, add oil, garlic, jalapeño and onions. Cook for 2-3 minutes, until onions are translucent. Add chorizo and cook for 2 minutes.
- Add all the chopped ingredients, broth and seasoning. Stir and bring to a boil. Reduce heat, cover and simmer for 20 minutes or until vegetables are tender.
- Blend the soup until smooth using an immersion blender, or by transferring the soup to a blender (you may have to do this in batches).
- Season with salt and pepper and serve with a few cilantro leaves on top.

Great recipe. I left out the celery, added a bit of sundried tomato and some creme fraiche. Used smoked paprika. Tastes fantastic!
