Spiced Roasted Pumpkin Seeds

I get peckish all the time. I snack in the morning, afternoon, evening, and would even do it in my sleep if I could. Yet, I don’t gain any weight and my friends always wonder how I manage to do it. The reason is that I choose carefully what I snack on and drink green tea, coffee, and plenty of water. I don’t drink sodas nor do I snack on store bought chips, chocolates (unless it’s a snack size York peppermint pattie), cookies or cakes. I usually make my own snacks and I can tell you it saves me oodles of calories and fats at the end of the day. I get to pick what goes into my food and can make it taste exactly how I want. We all have busy lives and the good news is that making your own healthy snacks doesn’t have to take long AND costs less money than buying the pre-made versions. Another win! Spiced Roasted Pumpkin Seeds

These spiced roasted pumpkin seeds are sweet, salty & full of nutrients. Be it fall, winter, spring or summer, they are the perfect mid afternoon snack!

Ingredients

  • 1 cup fresh pumpkin seeds
  • 2 teaspoons extra virgin olive oil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon curry powder
  • 2 teaspoons honey

Instructions

  1. Clean and remove any pumpkin flesh from the seeds and rinse them under water. Pat dry with a towel or paper towel.
  2. Preheat oven to 350ºF.
  3. In a bowl, add pumpkin seeds and all the other ingredients. Mix well until the seeds are evenly coated.
  4. Line a baking tray with non stick foil and add pumpkin seeds. Spread them flat and apart from each other. Bake for 25-35 minutes, until golden brown. Keep a close eye after 15 minutes as the color will start changing – sugar tends to burn quickly on nuts and seeds.
  5. Cool and serve.
