Clean and remove any pumpkin flesh from the seeds and rinse them under water. Pat dry with a towel or paper towel.
Preheat oven to 350ºF.
In a bowl, add pumpkin seeds and all the other ingredients. Mix well until the seeds are evenly coated.
Line a baking tray with non stick foil and add pumpkin seeds. Spread them flat and apart from each other. Bake for 25-35 minutes, until golden brown. Keep a close eye after 15 minutes as the color will start changing – sugar tends to burn quickly on nuts and seeds.
Cool and serve.
