Watermelon Smoothie
Jackpot. Watermelon + coconut water + banana + pineapple = flavor bomb.
It’s one of those drinks you can’t stop sipping on and dream about when there is no more left. This watermelon smoothie is exactly what I crave when I’m dying of thirst; it’s light, fruity and a little tart. And I can see this pairing really nicely with a little vodka (or rum) for a summer cocktail you and your friends will love! Picture this: grilling and chilling in your backyard with a warm breeze brushing against your skin, orange skies and a cooling drink in your hand. Swoon!
This a very light watermelon smoothie with just a touch of Greek yogurt and half a banana. It’s not creamy by any means and the flavors of the coconut water, fresh lime and watermelon are at forefront of this drink recipe.
Not only is this watermelon smoothie addictive, it’s also super healthy! Watermelon has more lycopene than raw tomatoes which is a strong antioxidant that protects the skin against UV ray damage. And though it’s made of 91% water, making it almost calorie free, it’s also high in vitamin A, B6 and C. And of course there is Greek yogurt which has lots of good bacteria to promote a healthy digestive system, pineapple which promotes bone health and eye health due to its high concentration of vitamin C and bromelain, and coconut water which is rich in electrolytes and helps the body stay hydrated. It’s a super drink that’s super tasty!
You should can double the recipe for this watermelon smoothie and keep it in a pitcher, refrigerated for up to 3 days. The liquid will separate so you either need to give it a good shake or a stir before serving. I put mine in small juice bottles so they are easy to carry to around in my purse. It’s a low calorie pick me up drink that’s delicious, invigorating and really good for the skin.♥
