Gazpacho Bloody Mary

I love brunch! But I don’t love crowds. Enjoying a lazy meal and a Bloody Mary on a sunny Sunday with friends and family is one of my favorite experiences – and one I look forward to even more now that the weather is cooperating. But an epic brunch out, at least in NYC, seems to be contingent upon having perfect timing. Otherwise, your group of six just might be waiting an hour before being seated. Ugh! This has prompted me to invite people over to my place on the warm, spring weekends to whip up some quick chicken cordon bleu sandwiches, a warm broccoli and chickpea salad, some sweet apple turnovers and my new brunch favorite: the Gazpacho Bloody Mary.

We make a ton of gazpacho in Casa le Phelps. Aside from being super delicious and nutritious, it just happens to be one of the easiest recipes of all time to whip up. Everything goes in a food processor and gets blended until smooth. No cooking necessary! That’s the idea behind this gazpacho Bloody Mary. Everything (including vodka) goes into the blender. Voila… done. Most Bloody Mary recipes call for horseradish. While I love it, I left it out because I wanted this recipe to really stick to the flavor profile of a cleansing, garden-fresh gazpacho. Fresh tomatoes really do it for me, so I spend some time finding good quality tomatoes when I get the hankering to whip up a Bloody Mary. I use English cucumbers for this recipe because they have smaller seeds. Even though I cut the seeds out, there’s more cucumber left to toss in the food processor that way.

Aside from fresh veggies, I use both Sriracha and Tabasco for this gazpacho Bloody Mary recipe. Sriracha delivers sweetness with the heat. Tabasco has more of a vinegary element behind the fire. Both really lend their spiciness to a Bloody Mary in such distinct ways! A glass lined along the rim with celery salt is my favorite way to serve this delicious cocktail. Savory times ten!

Don’t get me wrong, I love meeting up for a great weekend meal in the city. But brunching at home means you’ll spend more time savoring your spicy, tart and veggie loaded cocktail in the warm, sunny breeze on the patio than waving your arms at your server, who just got seated with four new tables all at once, so you can order another Bloody Mary. I’ve just made up my mind that this weekend will include good friends, veggies and vodka (in the backyard). Sundays have never looked better!

Ingredients

Scale
  • 2 large tomatoes (roughly chopped)
  • 1/2 slices English cucumber (peeled, seeded and roughly chopped), plus a few extra pieces for garnish
  • 1/4 red bell pepper (roughly chopped)
  • 1/2 cup vodka
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon lemon juice (plus lemon wedge for moistening glass rim)
  • 1 tablespoon red wine vinegar
  • 1/2 tablespoon sriracha sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon celery salt (plus extra to rim glass before serving)
  • Tabasco sauce (to taste, or similar pepper sauce)
  • celery and cucumber sticks for garnish

Instructions

  1. Place all ingredients – except for garnish – into a blender and mix until smooth.
  2. Pour a good amount of celery salt on a small plate. Cut a lemon wedge and moisten the rim of your glass with it. Gently dip the rim of the glass into the celery salt and coat evenly.
  3. Pour Gazpacho Bloody Mary into glasses over ice, add garnish and serve.
