This cleansing kale and quinoa salad couldn’t have come at a better time. After a holiday weekend spent feasting on creamy cheeses, cured meats, pies, cookies and cocktails, my body was begging pleading for a big bowl of healthy and nutritious goodness. Something light, easy to digest and with ingredients that have cleansing properties for the body.
This is a happy detox kale and salad recipe that’s filling and soothing to the soul – especially if you feel heavy around the waistline like I do right now!
The ingredients are readily available and there is little work involved. I’m using pickled beets instead of fresh ones because of their lovely tangy and acidic flavor. Plus, dealing with them is a mess-free process as they are ready to eat. Since we’ve all been spending a L-O-T of time in the kitchen this past week, I think we can all agree that easier is better!

Description
A healthy and cleansing salad to re-energize your body and mind. This detox kale and quinoa salad requires little prepping and is ready in 15 minutes from start to finish!
Ingredients
- 1 cup cooked quinoa
- 1 1/2 cup baby kale (finely chopped)
- 1 cup English cucumber (chopped bite size)
- 1 avocado (peeled, pitted and roughly chopped)
- 1 cup pickled beets (roughly chopped)
- 1/2 cup alfalfa sprouts
- 2 tablespoons sunflower seeds
Vinaigrette
- 1 teaspoon dijon mustard
- 2 tablespoons red wine vinegar
- 3 tablespoons extra virgin olive oil
- 1 tablespoon honey
- salt and pepper (to taste)
Instructions
- Put the ingredients for the vinaigrette in a tupperware container, close with a lid and shake vigorously until the vinaigrette looks cloudy.
- Divide all the ingredients for the quinoa salad among two bowls and top with vinaigrette. Lightly toss, season with salt and pepper and serve.

This is so good! I’ve been trying to have a salad every day for lunch and looked up some inspiration, since I’m not a huge fan of salads-for-a-main-meal. This one looked pretty, the ingredients easy enough, and it came together so nicely! I was worried it would be somewhat plain, but the dressing adds a nice sweetness and the beets their own earthy, sweetness. The quinoa was warm-from-the-stove which added a nice contrast. I added a bit of salmon and it was de-lish. Will be making again!
