I get peckish all the time. I snack in the morning, afternoon, evening, and would even do it in my sleep if I could. Yet, I don’t gain any weight and my friends always wonder how I manage to do it. I usually make my own snacks and I can tell you it saves me oodles of calories and fats at the end of the day. I get to pick what goes into my food and can make it taste exactly how I want. You won’t find anything healthier than your own creations so make time to spend an extra 15-20 minutes puttering around the kitchen – it’s totally worth it!

Description
These spiced roasted pumpkin seeds are sweet, salty & full of nutrients. Be it fall, winter, spring or summer, they are the perfect mid afternoon snack!
Ingredients
- 1 cup fresh pumpkin seeds
- 2 teaspoons extra virgin olive oil
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon curry powder
- 2 teaspoons honey
Instructions
- Clean and remove any pumpkin flesh from the seeds and rinse them under water. Pat dry with a towel or paper towel.
- Preheat oven to 350ºF.
- In a bowl, add pumpkin seeds and all the other ingredients. Mix well until the seeds are evenly coated.
- Line a baking tray with non stick foil and add pumpkin seeds. Spread them flat and apart from each other. Bake for 25-35 minutes, until golden brown. Keep a close eye after 15 minutes as the color will start changing – sugar tends to burn quickly on nuts and seeds.
- Cool and serve.
