I get peckish all the time. I snack in the morning, afternoon, evening, and would even do it in my sleep if I could. Yet, I don’t gain any weight and my friends always wonder how I manage to do it. We all have busy lives and the good news is that making your own healthy snacks doesn’t have to take long AND costs less money than buying the pre-made versions. Another win! These spiced roasted pumpkin seeds only take 5 minutes to prep and are finished in the oven. I also have these amazing no bake oatmeal cookies that are ready to eat in just 10 minutes. Description

These spiced roasted pumpkin seeds are sweet, salty & full of nutrients. Be it fall, winter, spring or summer, they are the perfect mid afternoon snack!


Ingredients

Scale
  • 1 cup fresh pumpkin seeds
  • 2 teaspoons extra virgin olive oil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon curry powder
  • 2 teaspoons honey

Instructions

  1. Clean and remove any pumpkin flesh from the seeds and rinse them under water. Pat dry with a towel or paper towel.
  2. Preheat oven to 350ºF.
  3. In a bowl, add pumpkin seeds and all the other ingredients. Mix well until the seeds are evenly coated.
  4. Line a baking tray with non stick foil and add pumpkin seeds. Spread them flat and apart from each other. Bake for 25-35 minutes, until golden brown. Keep a close eye after 15 minutes as the color will start changing – sugar tends to burn quickly on nuts and seeds.
  5. Cool and serve.
