I took a little break last week to meet friends and family for a relaxing vacation in Washington. We rented a house in Port Orchard right by the water (paradise) where we kayaked, played pickle ball, drank plenty of wine and ate like kings and queens. This vacation was greatly needed after almost 15 months of hard work, barely taking weekends off to recharge my tired brains. Summer came and went with me spending most if in front of a computer screen. I was in dire need of nature, laughter, some outdoor grilling, libations and late mornings in bed. I looked at my computer a total of three times for no longer than a few minutes at a time. I was on VA-CA-TION mode and loved every minute of it!
And though I was technically on a break from work, I couldn’t resist cooking a few easy, tasty dishes like a detox salad, a watermelon, strawberry and tomatillo salad, and this simple and healthy banana bread recipe.
Don’t expect the same level of sweetness as you would get with a traditional banana bread; this is after all a healthy version of what most of us consider dessert! This healthy banana bread recipe is more like breakfast – sweet enough to satisfy a sugar craving but also really satisfying in terms of texture (tender with a soft crunch from the walnuts) and feel good ingredients.

- 1/2 cup maple syrup
- 1/2 cup coconut oil
- 2 large eggs
- 2 medium bananas (ripe)
- 1 1/4 cups whole wheat flour
- 1/2 cup ground flaxseed
- 3/4 teaspoon baking soda
- 2 ounces unsweetened chocolate (60-70% cacao)
- 1 kiwi (chopped bite size)
- 1/2 cup chopped walnuts
- Preheat oven to 375ºF.
- In a blender or food processor, add maple syrup and slowly add coconut oil to the mixture until it has emulsified and looks thicker. Add eggs and bananas and blend for 10 seconds. Set aside.
- In large bowl, add whole wheat flour, ground flaxseed and baking soda and mix well using a whisk or a spoon.
- Add banana mixture to the bowl along with kiwi, chocolate and walnuts. Mix well.
- Pour mixture into a loaf pan greased with a little butter or coconut oil.
- Bake for 35-40 minutes.
