Sparkly-fruity drink, come to me so we can spend lots of time together!

I have a weakness for Prosecco and Champagne and their sparkling effervescence. Holding a Champagne flute filled with golden-hued bubbles relaxes me and makes me feel like I am officially on vacation.

Adding a little flavor to those bubbles isn’t a bad thing either – there are a lot of complimentary ingredients that pair beautifully with sparkling wines, such as strawberries, thyme and lemons. Yummy!

These strawberry and lemon Prosecco floats only take five minutes to prep and only require four ingredients.

Instead of infusing the flavor of thyme by simmering it in sugar syrup, I’m simplifying the process by blending it with fresh strawberries and lemon juice. Once blended, I strained the liquid through a sieve to get a smooth liquid. Easy!

The result is really pretty: a light pink colored sparkling wine topped with a white, cloudlike foam. The flavors start off mild and intensifies as you finish your drink. Strong floral and fruity notes hit the palate and fizzle away with the bubbles.

The lemon juice tames some of the sweetness of the sorbet and brightens up the drink, making it really refreshing!

I like to serve these strawberry and lemon prosecco floats with a simple pasta, a light salad or some type of seafood. Because the cocktail is light and bright, it’s best to stick to clean and simple dishes so as not to overwhelm the taste of it.

These Prosecco Floats are such a treat! Sweet & a little tart, and with hints of citrus and herbs, they taste like a refreshing fruity dessert in a glass!


Ingredients

Scale
  • 7 strawberries (hulled and sliced in half)
  • 1/2 teaspoon fresh thyme
  • 2 tablespoons fresh lemon juice
  • 1 pint small lemon sorbet
  • 750 ml Prosecco (chilled)

Instructions

  1. Put strawberries, thyme and lemon juice in a blender and blend until smooth.
  2. Put a strainer on top of a bowl and using a spoon, slowly swirl the mixture through the holes. This will remove any grainy bits and strawberry seeds. Alternatively, you can use a cheese cloth and push the liquid through the gaps Save the smooth syrup in a sealable container.

Assembling the prosecco floats

  1. Add 1/2 tablespoons of lemon sorbet at the bottom of each glass.
  2. Add 1 teaspoon of strawberry-thyme syrup on top of the sorbet.
  3. Slowly top with prosecco and serve immediately.

Notes

About Prosecco: sparkling wine can only keep in the fridge for one or two days. It is recommended to drink it as soon as it is opened to enjoy its fizzy component.

The strawberry lemon and thyme syrup can keep in the fridge (sealed with a lid) for about a week.
