Oven roasted Brussels sprouts with bacon, cranberries and walnuts
Now that Halloween has passed and daylight saving time is officially over, we are getting one step closer to the holiday season. And what better than serving a bowl of oven roasted Brussels sprouts to celebrate November’s arrival and the soon-to-be family dinners and festive libations coming our way.
To give my oven roasted Brussels sprouts a Thanksgiving theme, I added a couple of strips of bacon, some toasted walnuts and topped the whole thing with dried cranberries.
Gobble, gobble!
We all love bacon and the good thing about bacon is you don’t need to use a lot to flavor salads, pasta, sandwiches, or in this case, a bowl of oven roasted Brussels sprouts. Two or three strips is enough to infuse most dishes with that addictive, salty and smoky combination that’s so hard to resist.
There is no other seasoning (except for an optional teaspoon of a maple syrup) added to this dish either! It already has so much flavor that I didn’t want to mess with the lovely and natural notes each ingredient brought to the party.
This oven roasted Brussels sprouts recipe is low maintenance too: little prep is required and esthetically speaking, it needs no bells and whistles. Look at it, it’s already gorgeous!

Description
Celebrate Thanksgiving and other winter holidays with this delicious oven roasted Brussels sprouts recipe! Sweet, salty and smoky – healthy has never tasted so good!
Ingredients
- 22–24 Brussels sprouts (roughly 2 pounds)
- 1 tablespoon extra virgin olive oil
- 3 strips bacon
- 1/4 cup dried cranberries
- 1/4 cup walnuts (roughly chopped)
- salt and freshly ground black pepper
- 1 teaspoon Maple syrup (optional)
Instructions
- Preheat oven to 375ºF.
- Clean and trim Brussels sprouts and cut them in half.
- Add Brussels sprouts to a cooking tray and drizzle extra virgin olive on top. Season with salt and pepper and toss using your fingers to coat evenly. Bake for 25-30 minutes until Brussels sprouts are tender.
- Meanwhile, cook bacon strip until just short of crispy and transfer to a plate covered with paper towel. Keep the bacon oil!
- Add walnuts to the bacon oil and cook on medium heat for 2-3 minutes, until walnuts are golden brown. Add walnuts to the plate next to the bacon.
- Chop bacon into bite size pieces and toss in a bowl together with walnuts, dried cranberries and Brussels sprouts (and maple syrup). Season with salt and pepper and serve.
Notes

Brussels sprouts done right!!! This is a GOURMET dish! We pair it with Filet mignon or huge thick bone-in pork chops from our organic butcher’s shop. We always add some raw milk bleu cheese crumbles on top of the Brussels when served. The flavor will knock your socks off!!!! We alternate between walnuts and pecans. Either one is perfect!!!!!

Hi Marie, you can roast the Brussels sprouts in advance but I would recommend frying the bacon the day of since it’s always better when it’s crispy 🙂

when do you put the brussel sprouts in the oven to cook,they are hard
Hi Joan! The Brussels sprouts (sliced in half) should be tender after about 25-30 minutes in the oven. If they are still hard, leave them in for an additional 5-15 minutes, cooking time varies depending on the size.
