Baked Chicken Thighs with Soy Marinade

I love it whenever something this simple comes out tasting so delicious. Knowing I don’t have to slave in the kitchen every time I want to make good food is always good news! This baked chicken thighs recipe only requires eight ingredients and takes less than 10 minutes to prep. The flavors are also very familiar: a mix of smoky, sweet and savory flavors you’ve surely tasted before. The chicken thighs are marinated for about half an hour, baked for 40 and broiled for 3-4 minutes to give the skin a nice char. They are – sorry guys but I have to say it – finger licking good!

What I also love about this baked chicken thighs recipe is how much flavor is infused into the thighs. They are so flavorful that you don’t need to serve a ton to satisfy a table of hungry eaters. One or two thighs per person is enough when served with rice and veggies. The sauce is super tasty and soaks into white rice beautifully. It’s one of those meals that tastes better when eaten shamelessly with plenty of gusto – so encourage your family to make a mess (this time only)!

You can make these baked chicken thighs ahead of time. Keep them sealed and refrigerated until time to serve. Reheat in a microwave for a couple of minutes or in the oven at 220ºF for about 20-30 minutes.

Description

Moist and tender baked chicken thighs with a simple soy and honey marinade – less than 10 minutes to prep and simply delicious!


Ingredients

Scale
  • 1 pound chicken thighs

Marinade

  • 2 tablespoons shallot (finely chopped)
  • 1 clove garlic (minced)
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons honey
  • 1 teaspoon sriracha sauce
  • 1 teaspoon sesame oil

Instructions

  1. Put all the ingredients for the marinade in a bowl and mix well. Pour half of the marinade in a Ziploc bag and add chicken thighs.
  2. Let marinate for 30-40 minutes.
  3. Pre-heat the oven to 350ºF. Put chicken in a baking dish and cover with foil.
  4. Bake for 30 minutes, or until the chicken’s internal temperature reaches 165ºF.
  5. Turn the oven to broil and broil chicken for 2-3 minutes, until skin is almost charred.
  6. Take out of the oven and transfer to a plate.
  7. Pour leftover marinade in a small bowl and serve together with chicken, as a dipping sauce.
