“Where’s the chicken salad sandwich mix?” I asked my husband.

“Um… Yeah… I sorta ate the whole thing?” he said. “I made myself a sandwich and because there wasn’t enough left for another one, I ate the leftovers with a spoon…”

Sometimes I cook dishes that are so popular in our house that it’s gone in 60 seconds. Luckily, I had shot the sandwich before my poor starving husband found the tupperware container in the fridge – he takes his job as food taster very seriously (though I’m not sure if scarfing down a tub of food is part of the job description).

It always makes me very happy whenever I see the food I cook disappear so quickly. It’s probably the best compliment a cook can ask for and for me, it’s also a good indicator of what dish will be appearing on my blog.

A healthy chicken salad sandwich recipe sounds like nothing much but boy oh boy can I tell you that this is one seriously delicious chicken salad sandwich! It’s a little salty, sweet, spicy and tart. It’s also tender and creamy with a nice crunch coming from the shaved almonds and green apples.

The only problem with this healthy chicken salad sandwich recipe is that it can be addictive – beware of hungry people as they will steal it all away from you!

You can make this healthy chicken salad sandwich recipe in advance but it’s better to make it the day of because of the avocado. The color of the chicken salad may change and not look as appealing, though the flavors will still be just as yummy!

Serve this healthy chicken salad sandwich with sauteed Brussels sprouts with breadcrumbs and almonds, pickled cucumber and onion salad, crunchy quinoa and kale salad or baked chips with paprika and salt.

Description

Tasty and creamy healthy chicken salad sandwich recipe made with chunks of grilled chicken, avocado, apples, lime and jalapeno. Sweet, salty and spicy!


Ingredients

Scale
  • 1 avocado
  • 1/4 cup mayonnaise
  • 1/4 plain Greek yogurt
  • 1 tablespoon lime juice
  • 1 teaspoon fish sauce
  • 1/2 pound cooked chicken breast (chopped bite size)
  • 1 jalapeño or other chile pepper (finely chopped)
  • 1 stalk celery (finely chopped)
  • 1/2 green apple (peeled, cored and finely chopped)
  • 2 tablespoons sliced almonds
  • ciabatta or sandwich bread

Instructions

  1. Put avocado in a large bowl and mash with a fork until smooth. Add mayonnaise, Greek yogurt, fish sauce and lime juice and mixed until all the ingredient are blended and texture is smooth.
  2. Add chopped chicken, jalapeño, celery, green apple and sliced almonds and stir until all the ingredients are evenly coated.
  3. Serve with your favorite bread.
