Interesting note: cacciatore in Italian translates to ‘hunter’. So preparing something alla cacciatore means that the protein is usually cooked with onions, tomatoes, herbs, bell peppers and wine. Sometimes even mushrooms. An awesome combo to be sure! Ingredients
- 1 medium onion (thinly sliced)
- 1 red bell pepper (finely chopped)
- 300 grams mushrooms (sliced in half)
- 1 pound chicken breast fillets (or 4 chicken thighs)
- 3 cloves garlic (minced)
- 1 teaspoon dried oregano
- 4 sprigs thyme
- 1 teaspoon salt
- 1 bay leaf
- 1 tablespoon capers (drained)
- 14.5 ounces can diced tomatoes
- 1/2 cup chicken broth
- 1/2 cup red wine
- good quality extra virgin olive oil for drizzling before serving
- cooked spaghetti to serve with (optional)
Instructions
- Place all the ingredients in a multi cooker and cook on low for 3-4 hours.
- For a traditional slow cooker, cook on low for 7-8 hours.
- Serve with pasta and a drizzle of olive oil.
