Coconut Milk / Coconut Cream  

Most commonly sold in cans, coconut milk (Maphrao, มะพร้าว) is an essential ingredient in many curries.

It has the effect of tempering spice and lends a layer of aromatic creaminess to the flavor profile of many Thai dishes. Slightly sweet and a tad high in saturated fat, the thicker paste-like substance that floats to the top of the can is coconut creme.

Give the can of coconut milk a shake to even out the consistency.

There are also ‘light’ variations of coconut milk that keep the cholesterol levels in check.
