The weather today is simply gorgeous! I cooked and shot recipes with the windows opened and danced in the kitchen while listening to an old Postal Service album. It’s days like today that make me grateful to be working from home. Blogging can be tiring and frustrating at times but the fact remains that I’m doing something I love from the bottom of my heart – and that makes me beyond happy!

This weekend I’m inviting a few of my friends over to celebrate the warmer temperatures by hosting a picnic at sunset. I thought it would be fun to create a garden party atmosphere on a rooftop with portable outdoor lights, a cliché plaid blanket, tons of pillows, finger sandwiches, snacks, wine, and a cooler full of homemade frozen treats.

What my friends don’t know is that I will be serving not just regular frozen treats but lemon and Cava Popsicles. Sweet, tart and boozy popsicles to suck on while they enjoy the beautiful backdrop that is the Manhattan skyline – I can’t wait!

This recipe makes six to eight Popsicles and is super easy. All you need is one bottle of Cava, a few lemons and some simple syrup. Mix the ingredients together, pour the mixture into Popsicle molds and freeze overnight. There will be some Cava left (a little less than half a bottle) so you can either pour yourself a glass or two before bed time or serve it the next day alongside the popsicles.

Pairing a Popsicle with a glass of Cava is a such a fun way to break the ice and get people talking and mingling with each other. I’m willing to bet this will be a first for most of them – watch out Instagram, you’re about to get bombed with Popsicle pics!

I love inviting friends over for no other reason than to hang out. Our lives can get so busy we too often forget to spend quality time with each other. Hosting intimate evenings like this rooftop picnic is my way to show them how much I love and cherish their friendships. I could cook for them every day as long as they take care of the cleanup!

You can make these lemon and Cava popsicles up to a week in advance, kept in the freezer. The easiest way to take them out of their molds is to run warm water over them before gently pulling the Popsicle sticks.

Description

A refreshing boozy treat that’s also a palate cleanser!


Ingredients

Units Scale
  • 14 oz Cava
  • 1/2 cup simple syrup
  • 150 ml freshly squeezed lemon juice

Instructions

  1. Combine all ingredients together into a large measuring cup, then evenly distribute in your Popsicle molds, leaving about 1/4 inch of room at the top. Freeze overnight.

Simple syrup:

  1. Bring 1/2 cup sugar and 1/2 cup water to a low simmer and cook for 3 minutes. Let cool to room temperature before using.
