Ginger Soda with Lime Leaf and Chili

Once in a while I want to open and big bottle of Coke and just chug the whole thing down. I grew up when Coke was simply cool and didn’t have any major negative connotation attached to it.

If you wanted something cold and refreshing to hit that sweet spot, Coke was the answer.

However, nowadays we know how much sugar sodas contain and the thought of putting 17 packets of sugar into my body in one sitting scares the hell outta of me!

So instead of feeling helpless and sad drinking plain old water, I make my own sodas. An easy one to make is this ginger soda with lime leaf and chili. Zing zing!

You will love this if you love feeling a good amount of heat in your throat, this ginger soda is spicy! It’s also a much healthier option to drinking regular soda because you only need about two tablespoons of homemade ginger syrup for a 12oz glass mixed with soda water.

Pour over ice, squeeze one or two lime wedges and enjoy a breezy and guilt free Thai style ginger soda.

Once your chili, kaffir lime leaf and ginger syrup is made, you can keep it the fridge and make yourself a brand new drink whenever you feel like it – it’s really that simple!

You can add a little vodka or gin if you are hosting a barbecue or having friends for dinner… Or if you want to feel a little fancy alone at home in your curlers and slippers. Please, I do it all the time while I watch my girly shows!

A Thai inspired ginger soda obviously goes well with South East Asian food. How about these amazing Vietnamese Meatballs glazed with hoisin sauce, they are addictive!

Or if you would rather have something clean like a salad, try this spicy shrimp and cucumber salad or all an all fruit mango and apple one. Cheers!

Description

A refreshing and spicy homemade ginger soda perfect for hot summer days!


Ingredients

Scale
  • 1/2 cup sugar
  • 1/4 cup peeled and chopped ginger (about a large thumb size piece)
  • pinch salt
  • 1 teaspoon red pepper flakes
  • 5 kaffir lime leaves
  • 1 cup water
  • fresh basil leaves
  • 3 cups soda water (or seltzer)
  • 2 limes (cut into wedges)

Instructions

  1. Boil and simmer sugar, water, ginger, salt, pepper flakes and lime leaves. Simmer for 15 minutes covered.
  2. Steep for 15 minutes and strain syrup in a bowl. Cover and refrigerate until cold.
  3. Use 12 ounce glasses and add two basil leaves shredded with your fingers with 2 tablespoons simple syrup and lightly muddle. Add 4 or 5 ice cubes, top with seltzer (soda water) and squeeze one or two lime wedge. Stir and serve.

Notes

You can save the ginger syrup in a container and refrigerate for up to 2 weeks.
