Stir Fried Ginger Pork with Snow Peas

A savory pork stir fry with snow peas and bell peppers, tossed in a garlic and ginger sauce.

Ingredients

  • 1 thumb size ginger, peeled and cut into strips
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1/2 pound boneless pork chops, sliced bite size
  • 2 tablespoons fresh lime juice
  • 1 1/2 teaspoons honey
  • 2 1/2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 cups snow peas
  • 1/3 bell peppers, chopped bite size
  • 1 teaspoon cornstarch mixed with 2 teaspoons water

Instructions

  1. Cook the pork: In a large pan or work over medium high heat, add oil, garlic and ginger, and cook for a minute. Add pork and cook for about 3 minutes, until pork has almost cooked through.
  2. Cook the vegetables: Lower the heat a little and add the snow peas and bell peppers and cook for 3 to 4 minutes, until the veggies have softened a little but still retain a slight crunch.
  3. Add the flavors: Stir in the lime juice, soy sauce, sesame oil and honey.
  4. Add the cornstarch slurry: Add the cornstarch and water mix to the stir fry and stir until the sauce thickens.
  5. Serve: Serve with white or brown rice.

Notes

This pork stir fry will keep refrigerated for up to 3 days, in a storage container.
