Stir Fried Ginger Pork with Snow Peas

Description

A savory pork stir fry with snow peas and bell peppers, tossed in a garlic and ginger sauce.


Ingredients

  • 1 thumb size ginger, peeled and cut into strips
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1/2 pound boneless pork chops, sliced bite size
  • 2 tablespoons fresh lime juice
  • 1 1/2 teaspoons honey
  • 2 1/2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 cups snow peas
  • 1/3 bell peppers, chopped bite size
  • 1 teaspoon cornstarch mixed with 2 teaspoons water

Instructions

  1. In a large pan or work over medium high heat, add oil, garlic and ginger, and cook for a minute. Add pork and cook for about 3 minutes, until pork has almost cooked through.
  2. Lower the heat a little and add the snow peas and bell peppers and cook for 3 to 4 minutes, until the veggies have softened a little but still retain a slight crunch.
  3. Stir in the lime juice, soy sauce, sesame oil and honey.
  4. Add the cornstarch and water mix to the stir fry and stir until the sauce thickens.,
  5. Serve with white or brown rice.

Notes

This pork stir fry will keep refrigerated for up to 3 days, in a storage container.
