A yogurt based chilled cucumber soup with garlic and fresh dill.

Ingredients

Scale
  • 1 English cucumber (cut into small cubes)
  • 1 clove garlic (finely chopped)
  • 1/2 cup fresh dill (finely chopped)
  • 2 1/2 cups plain yogurt
  • 1 tablespoon fresh lemon juice
  • 1/3 cup water
  • 2 teaspoon kosher salt
  • 1 tablespoon extra virgin olive oil
  • chopped walnuts ((optional))
  • lemon wedges ((optional))

Instructions

  1. Put all the ingredients in a mixing bowl except the walnuts and lemon wedges and mix well.
  2. Add more water if you prefer thinner consistency.
  3. Refrigerate and serve chilled with walnuts and lemon wedges.
