Cold Sesame Noodles

Nutty, sweet and a little spicy, these chilled sesame noodles are ready in just 15 minutes!

Ingredients

Units Scale
  • 1 pound fresh or frozen Chinese egg noodles
  • 1 tablespoon toasted sesame oil
  • 1 cup English cucumber, peeled, seeded, and sliced into sticks
  • 1/4 cup chopped roasted peanuts (optional)

Sauce

  • 2 tablespoons Chinese sesame paste or tahini
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon smooth peanut butter
  • 1 tablespoon granulated sugar
  • 1 tablespoon ginger, minced
  • 1 teaspoon garlic, minced
  • 2 teaspoons chili garlic sauce

Instructions

  1. Cook and drain the noodles. Cook noodles according to directions on the package (usually about 5 minutes) in boiling water. Drain, rinse under cold water, drain again and transfer to a large bowl. Add the sesame oil and toss well.
  2. Make the sauce. Whisk all the ingredients for the sauce in a bowl and add to the noodles. Toss until noodles are evenly coated.
  3. Garnish and serve. Top with cucumber and/or peanuts. Serve at room temperature – or toss them in the fridge until cold. Your choice.

Notes

Keep leftover sesame noodles in a storage container and refrigerate for up to 3 days.
