Soba noodles chirashi

Japanese soba noodles with fish cakes and shiitake mushrooms


Toppings (optional)


  1. To make the sauce, put the water, soy, mirin and dried fish flakes in a small pot and simmer on low until the sauce is very warm, but not boiling hot.
  2. Cook the soba noodles according to package instructions, drain and rinse under cold water.
  3. Divide the noodles into two bowls, add the toppings and pour a little sauce over. Put the remainder of the sauce in a small sauce pot and serve with soba, for those who’d like to add more flavor to their dish.
