Sauteed mushrooms and onions with paprika recipe – Sweet pearl onions and earthy mushrooms are pan fried with butter, paprika and salt and finished in the oven.

Ingredients

  • 2 tablespoons butter
  • 1 tablespoon extra virgin olive oli
  • 2 cloves garlic (minced)
  • 1 tablespoon thyme (leaves picked)
  • 12-14 button mushrooms (rinsed, dried and stems removed)
  • 10-12 pearl onions
  • 1/2 teaspoon paprika powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 cup arugula

Instructions

  1. Preheat oven to 450ºF.
  2. In an oven safe frying pan over medium heat, add 1tbsp butter, extra virgin olive oil, garlic and thyme and cook for one minute.
  3. Add mushrooms and pearl onions flat in the pan and cook for 7 minutes, until onions are beginning to soften.
  4. Place the pan in the center of the oven and roast for 15 minutes, until onions are tender.
  5. Take the pan out of the oven, add paprika salt, pepper and remaining butter and gently toss. Top with arugula and roast for another 3-5 minutes, until arugula has completely wilted.
  6. Serve immediately.

Notes
