4 medium russet potatoes, peeled and sliced into 1/4-inch thin sticks
2 tablespoonsolive oil
Za'atar Spice Mix
1 tablespoonfresh thyme, chopped
1 tablespoonfresh oregano, chopped
1 1/2 teaspoonground sumac
1 tablespoonsesame seeds
1/2 teaspoonkosher salt
1/2 teaspoonfreshly ground black pepper
Instructions
Warm up the oven: Preheat oven to 450ºF.
Make the za’atar spice mix: In a small bowl, add ingredients for the za’atar spice mix and stir until blended. Set aside.
Prep the potatoes: Slice the potatoes into matchsticks place them on a baking tray covered with parchment paper.
Bake the potatoes: Drizzle 1 tablespoon olive oil, season with salt and toss the potatoes until they are evenly coated. Bake for 25-35 minutes, flipping them over halfway through the cooking process.
Season the fries and serve: Take the fries out of the oven and transfer to a large bowl. Drizzle the remaining 1 tablespoon olive oil, add 2 tablespoons of the za’atar spice mix and toss until the fries are evenly coated. Add more za’atar spice mix if needed. Serve.
Notes
Transfer the leftover za’atar spice mix to a jar and keep in a dark cool place for up to 2 months.
