Oven Baked Za’atar Fries

Smoky, salty, and herbaceous oven baked fries spiced with a Moroccan flair.

Ingredients

  • 4 medium russet potatoes, peeled and sliced into 1/4-inch thin sticks
  • 2 tablespoons olive oil

Za'atar Spice Mix

  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 1/2 teaspoon ground sumac
  • 1 tablespoon sesame seeds
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Warm up the oven: Preheat oven to 450ºF.
  2. Make the za’atar spice mix: In a small bowl, add ingredients for the za’atar spice mix and stir until blended. Set aside.
  3. Prep the potatoes: Slice the potatoes into matchsticks place them on a baking tray covered with parchment paper.
  4. Bake the potatoes: Drizzle 1 tablespoon olive oil, season with salt and toss the potatoes until they are evenly coated. Bake for 25-35 minutes, flipping them over halfway through the cooking process.
  5. Season the fries and serve: Take the fries out of the oven and transfer to a large bowl. Drizzle the remaining 1 tablespoon olive oil, add 2 tablespoons of the za’atar spice mix and toss until the fries are evenly coated. Add more za’atar spice mix if needed. Serve.

Notes

Transfer the leftover za’atar spice mix to a jar and keep in a dark cool place for up to 2 months.
