No Bake Oatmeal Cookies (Healthier)

Description

Easy, chewy and peanut buttery no bake oatmeal cookies recipe you won’t be able to stop eating! Only 10 minutes to prep and on the healthier side to boot!


Ingredients

Scale
  • 1/2 cup natural creamy peanut butter (125g)
  • 1 small ripe banana (mashed, about 1/3 cup)
  • 5 tablespoons honey
  • 3 tablespoons unsweetened cocoa powder
  • 1 tablespoon vanilla sugar (or 1 teaspoon vanilla extract)
  • 1/4 cup milk or unsweetened almond milk
  • 3 cups quick-cooking oats (such as Quaker’s Old Fashioned Oats)
  • 1/4 teaspoon salt
  • 1/3 cup mini chocolate chips (optional)

Instructions

  1. Line a baking tray with parchment paper and set aside.
  2. In a small pot over medium heat, add peanut butter and banana and stir until blended and smooth – about 2 minutes. Transfer to a bowl.
  3. Add all the other ingredients except chocolate chips and mix well until oatmeal is evenly coated.
  4. Scoop about 2 tablespoon of the mixture, shape into a round cookie and add to baking tray. Top with a chocolate chip in the center. Repeat until all the dough has been used.
  5. Refrigerate for at least 2 hours. Alternatively, you can freeze them for 30 minutes and refrigerate for another 45 minutes for a speedier process.
