Description
A savory pork stir fry with snow peas and bell peppers, tossed in a garlic and ginger sauce.

- 1 thumb size ginger, peeled and cut into strips
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1/2 pound boneless pork chops, sliced bite size
- 2 tablespoons fresh lime juice
- 1 1/2 teaspoons honey
- 2 1/2 tablespoons soy sauce
- 1 teaspoon sesame oil
- 2 cups snow peas
- 1/3 bell peppers, chopped bite size
- 1 teaspoon cornstarch mixed with 2 teaspoons water
Instructions
- In a large pan or work over medium high heat, add oil, garlic and ginger, and cook for a minute. Add pork and cook for about 3 minutes, until pork has almost cooked through.
- Lower the heat a little and add the snow peas and bell peppers and cook for 3 to 4 minutes, until the veggies have softened a little but still retain a slight crunch.
- Stir in the lime juice, soy sauce, sesame oil and honey.
- Add the cornstarch and water mix to the stir fry and stir until the sauce thickens.,
- Serve with white or brown rice.
Notes
This pork stir fry will keep refrigerated for up to 3 days, in a storage container.
