A creamy vegan tofu dressing that’s light and tasty.
Ingredients

- 6 ounces silken tofu (drained)
- 3 tablespoons extra virgin olive oil
- 1 1/2 tablespoons grated ginger
- 3 tablespoons tahini or Japanese sesame paste (neri goma – 練りごま)
- 3 tablespoons water
- 4 tablespoons rice vinegar
- 1 tablespoon granulated sugar
- 1/2 teaspoon kosher salt
Instructions
- Whisk all the ingredients in a bowl and refrigerate. The dressing will keep for 1 week.
