CHICKEN CORDON BLEU SANDWICH

1 tablespoon extra virgin olive oil (plus extra for brushing)
4 slices multi-grain bread
2 ounces Gruyère or Swiss cheese (shredded)
4– 6 slices salami
1/2 pound skinless chicken cutlet
1 teaspoon fresh thyme leaves (chopped)
1– 2 teaspoons dijon mustard salt and pepper to taste
Season chicken with salt and pepper and set aside.
Heat a nonstick grill-pan or frying pan over medium heat and brush with olive oil.
When the pan is hot, add chicken and cook on each side for 2-3 minutes, or until chicken is cooked through.
Remove chicken cutlet from grill pan and, using two forks, shred the chicken and set aside.
Assemble the sandwiches: spread Dijon mustard on each slice of bread, sprinkle thyme, top with cheese, salami slices, shredded chicken and fold over to create two sandwiches.
In a grill-pan or frying pan over medium heat, add olive oil and sandwiches.
Cook for 3 minutes (or until bread becomes golden brown), flip and cook other side 2-3 minutes.
Transfer sandwiches to cutting board, sprinkle with thyme and serve immediately.
This Chicken Cordon Bleu Sandwich Recipe can keep refrigerated for 1 day but is much better when eaten fresh!
