Ingredients

- 3 cloves garlic (minced)
- 1 onion (finely chopped)
- 1 green bell pepper (seeded, chopped bite size)
- 2 stalks celery (chopped bite size)
- 2 carrots (chopped bite size)
- 1 quart vegetable broth
- 1/2 cup tomato sauce
- 1 bay leaf
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 tablespoon dried oregano
- 1 cup green lentils
Instructions
Slow Cooker Method
- Put all the ingredients in a slow cooker and cook on low for 4-5 hours or until ingredients are tender. Season with salt and pepper and serve.
Stove Top Method
- Put all the ingredients in a large pot and bring to a boil. Reduce heat to a simmer, cover and cook for 40-60 minutes, or until vegetables are tender. Season with salt and pepper and serve.
Notes
This Vegan Lentil Soup will keep refrigerated for up to 4-5 days.
