Japanese sweet potatoes make the perfect vegan snack to nibble on mid afternoon to give you energy and keep you full until dinnertime.

Ingredients

  • 4 Japanese sweet potatoes
  • Aluminium foil

Instructions

  1. Preheat the oven to 350ºF.
  2. Scrub each potato under water to remove dirt and pat dry with a towel.
  3. Poke a few holes in each potato.
  4. Wrap one sweet potato in aluminium foil and repeat the same for the remaining 3 potatoes.
  5. Place the potatoes on a cooking tray and bake in the oven for 1 hour 10 minutes, or until the potatoes can easily be pierce with a knife or a skewer.
