Japanese Sweet Potato (Yaki Imo)

Japanese sweet potatoes baked until the reddish-purple skins are soft and the golden centers are naturally sweet, moist, and creamy.

Ingredients

  • 4 Japanese sweet potatoes
  • Aluminium foil, for wrapping

Instructions

  1. Preheat the oven. Preheat the oven to 350ºF (180ºCº).
  2. Clean the potatoes. Scrub the sweet potatoes under cold water to remove any dirt. Pat them dry.
  3. Pierce and wrap. Poke three or four holes in each potato and wrap each one in aluminum foil.
  4. Bake until tender. Place the potatoes on a baking sheet and bake for 1 hour and 10 minutes. Insert a skewer or thin knife into the thickest part. If it does not slide through easily, continue baking in 10-minute increments.
  5. Rest and serve. Carefully open the foil and let the potatoes rest for 5 minutes before serving.

Notes

  • The cooking time depends on the thickness of the potatoes. Very thick potatoes may take 80 to 90 minutes.
  • Refrigerate cooled potatoes without the original foil in an airtight container for 3 to 4 days.
  • Freeze individually wrapped potatoes for up to 3 months.
