Description
Tasty and creamy healthy chicken salad sandwich recipe made with chunks of grilled chicken, avocado, apples, lime and jalapeno. Sweet, salty and spicy!
Ingredients

- 1 avocado
- 1/4 cup mayonnaise
- 1/4 plain Greek yogurt
- 1 tablespoon lime juice
- 1 teaspoon fish sauce
- 1/2 pound cooked chicken breast (chopped bite size)
- 1 jalapeño or other chile pepper (finely chopped)
- 1 stalk celery (finely chopped)
- 1/2 green apple (peeled, cored and finely chopped)
- 2 tablespoons sliced almonds
- ciabatta or sandwich bread
Instructions
- Put avocado in a large bowl and mash with a fork until smooth. Add mayonnaise, Greek yogurt, fish sauce and lime juice and mixed until all the ingredient are blended and texture is smooth.
- Add chopped chicken, jalapeño, celery, green apple and sliced almonds and stir until all the ingredients are evenly coated.
- Serve with your favorite bread.

Serving size is without the bread.
