Shaved Carrot Salad

A bright and crunchy shaved carrot salad with just the right amount of sweetness, tanginess, and citrus!

Ingredients

Scale
  • 2 large carrots
  • 1 1/2 tablespoon lemon juice
  • 1 1/2 teaspoons white wine vinegar
  • 1/2 teaspoon dijon mustard
  • 1 1/2 teaspoons olive oil
  • Salt, to taste

Instructions

  1. Shave the carrots: Using a peeler, grate the carrots into thin ribbons and transfer them to a bowl.
  2. Make the vinaigrette: Mix the lemon juice, white wine vinegar, dijon mustard, and olive oil.
  3. Toss the salad: Pour the vinaigrette over the shaved carrots and toss well to coat evenly.
  4. Let it chill: Refrigerate the salad for at least 20 minutes.
  5. Serve: Season the salad with salt and pepper and serve cold.

Notes

Leftovers: Transfer the carrot salad to a storage container and refrigerate for up to 5 days. Freezing is not recommended.
