Description

A vibrant bowl of edamame hummus with cilantro that’s both healthy and delicious!


Ingredients

Units Scale
  • 1 1/2 cup shelled edamame beans
  • 1/4 cup extra virgin olive oil
  • juice of 1 lemon
  • 1 small garlic clove
  • 1/4 cup tahini
  • 1/2 cup cilantro (roughly chopped)
  • 6 tablespoons water
  • 1 teaspoon kosher salt
  • 1/4 teaspoon chili powder

Instructions

  1. Blend everything: Put all the ingredients in a blender and puree until smooth.
  2. Serve: Serve with nacho chips or pita bread.

Notes

Keep the leftover edamame hummus in an airtight storage container and refrigerate for up 5 days.
