Ingredients

- 2 medium potatoes (peeled and chopped bite size)
- 2 tablespoons soy sauce
- 2 tablespoons Parmesan cheese (grated)
- 3–4 tablespoons water
- 1 tablespoon scallions (chopped)
- toasted and flavored shredded nori
Instructions
- In a medium size pot, add water, soy sauce and potatoes.
- Bring to a boil, cover and cooked for 6-10 minutes, until potatoes are cooked through.
- Add parmesan cheese, mix well and top with scallions and shredded nori. Serve.
Notes
These easy cheesy potatoes can keep in the fridge for up to four days.
