Description

A healthy and cleansing salad to re-energize your body and mind. This detox kale and quinoa salad requires little prepping and is ready in 15 minutes from start to finish!


Ingredients

Scale
  • 1 cup cooked quinoa
  • 1 1/2 cup baby kale (finely chopped)
  • 1 cup English cucumber (chopped bite size)
  • 1 avocado (peeled, pitted and roughly chopped)
  • 1 cup pickled beets (roughly chopped)
  • 1/2 cup alfalfa sprouts
  • 2 tablespoons sunflower seeds

Vinaigrette

  • 1 teaspoon dijon mustard
  • 2 tablespoons red wine vinegar
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • salt and pepper (to taste)

Instructions

  1. Put the ingredients for the vinaigrette in a tupperware container, close with a lid and shake vigorously until the vinaigrette looks cloudy.
  2. Divide all the ingredients for the quinoa salad among two bowls and top with vinaigrette. Lightly toss, season with salt and pepper and serve.
