Description
A simple tofu recipe with a sweet and umami based glazed, broiled to perfection.
Ingredients
Scale
- 14 oz block firm tofu (drained)
- 4 tablespoons white or awase miso paste
- 1 tablespoon soy sauce
- 1 tablespoon granulated sugar
- 1 1/2 tablespoon mirin
- 1 1/2 tablespoon sake
- 1 1/2 tablespoon dashi
- 1 thumb size ginger (peeled and finely grated)
- 1 green onion (finely chopped)
- 1/2 teaspoon sesame seeds
Instructions
- Start by peeling and grating the ginger.
- Finely chop the green onion.
- Turn the oven to broil.
- Wrap the tofu in a couple of paper towels and leave until the paper is soaked.
- Unwrap the tofu and slice it in half widthwise (thickness) and in 4 slices lengthwise. You should have 8 sticks that look like French toast sticks.
- In a mixing bowl stir in the miso paste, soy sauce, mirin, sugar, sake, dashi and grated ginger.
- Place a skillet over medium high heat and add the tofu slices. Cook on each side for about 2 minutes, until they are golden brown.
- Transfer the tofu onto a sheet tray covered with parchment paper and brush a good amount of dengaku sauce on top of each slice.
- Broil for 2 to 4 minutes, until the sauce is bubbly and dark brown. Make sure to keep an eye on it as it can burn quickly!
- Transfer to a plate and top with sesame seed and green onions.
Notes
Keep the leftovers in an airtight storage container. No need to reheat the dish the next day, tofu dengaku is also delicious cold!
