Description
This is Japanese adaptation of the classic German potato dish.
Ingredients

- 2 potatoes, such as russet or Yukon gold
- 1 small onion, sliced into half moons
- 3 stalks scallions, roughly chopped
- 4 tablespoons vegetable oil
- 2 slices bacon, chopped bite size
- 1 tablespoon butter
- 1 1/2 teaspoon soy sauce
- freshly ground black pepper, to taste
Instructions
- Peel and cut the potatoes into medium size sticks (about the size of your finger). Add 3 tablespoons of oil to a large skillet and turn the heat on to medium high.
- When the oil is hot, add the potatoes and fry on each side for about 3-4 minutes, until they are golden brown. Take the potatoes out and rest them on paper towels to remove excess oil.
- Cook on each side for about 3-4 minutes, until golden brown.
- In another medium size pan over medium heat, add 1 tablespoon oil. Add the onions and scallions, and cook for 3 minutes. Add the bacon and cook for 3 minutes.
- Add the potatoes and butter and cook for 1 minute. Turn off the heat and plate.
- Pour the soy sauce over the potatoes, season with freshly ground black pepper and serve.
Notes
Save these potatoes in a storage container and refrigerate for up to 3 days.
