Description
This is a light and nutritious classic dal soup that can be served as an appetizer or a side.

- 1 tablespoons extra virgin olive oil
- 4 cloves garlic, minced
- 1 large onion, finely chopped
- 2 tablespoons tomato paste
- 1 teaspoon turmeric powder
- 2 cups orange lentils, dry
- 2 tablespoons ginger, minced
- 2 tablespoons garam masala
- 1/2 teaspoon cinnamon powder
- 1/2 teaspoon coriander powder
- 1 teaspoon salt
- 8 cups water
- Handful fresh cilantro, chopped
- Salt and pepper, to taste
- Lemon wedges
Instructions
- In a large pot over high heat add olive oil, garlic, onions and ginger. Cook for 7 minutes or until onions are soft and translucent.
- Add tomato paste, stir well and add turmeric, garam masala and salt. Stir.
- Add the water and lentils, and bring to boil.
- Lower heat, cover and simmer for 30 minutes.
- Turn off the heat, add cilantro and stir. Season with salt and pepper and serve with lemon wedges.
Notes
Save this dal soup in a storage container and refrigerate for up to 4 days.
