Heat olive oil and vegan butter. Add onions, carrots and celery until tender. Sprinkle flour and stir until golden brown. Slowly whisk in mushroom broth, soy sauce, mirin and salt. Turn the heat off and pass through a fine mesh strainer. Discard the veggies.
