Also called Chinese chili flakes, Sichuan chili flakes are made by deep frying whole Sichuan peppers in vegetable oil until crispy, and grinding them into flakes (seeds included).
Cook the oil, star anise, cinnamon stick, bay leaf, teaspoon cloves, garlic clove, shallot, and Szechuan peppercorns in a pan.
Let the ingredients infuse into an oil for 30-40 minutes.
Add the Chinese chili flakes and salt and gently stir to mix.
