Easy Vegetable Egg Rolls

We used to order egg rolls all the time from our favorite American Chinese spot in Brooklyn but it’s been a bit of a challenge ordering Asian vegetarian food since our move. So instead of complaining about the lack of vegetarian options in the area, I started making my own vegetarian egg rolls.

Are Egg Rolls Hard to Make?

It turns out that egg rolls are ridiculously easy to make, who knew! Not me, obviously, otherwise I would have added them to my easy meals collection years ago! This is a simple recipe for vegetable egg rolls that requires minimal prepping and don’t worry about the rolling part either – I have step-by-step pictures showing exactly how to do it.

Egg Roll Wrappers Filling Oil Dipping Sauce

Directions:

Fry your veggies. Stir in soy sauce, sugar, salt, and pepper. Transfer to a bowl and let cool.  Add filling mixture to the center of an egg roll wrapper and spread. Fold the edge over the filling and roll. Seal with water. Fry in oil until golden brown. Transfer to plate to remove excess oil. Serve with favorite dipping sauce!
