I was a lucky kid. My mother packed my lunch for me almost every school-day. There was nothing quite like tearing into my lunchbox to discover the amazing stuff my Japanese mother had packed for me. It was always so delicious that I felt a bit for my friends who were slogging their way through a tray of grayish mac’n’cheese and syrupy peach slices. The only exception was Salisbury Steak day. (Confession: I loved my Quebecois school’s version of that much maligned school-cafeteria staple). My all time favorite packed mom-lunch was the tomato and cucumber tea-sandwiches she’d make with wasabi-mayo – the crusts cut off, of course. The creamy saltiness of the mayo and the slight sting from the wasabi were so good, I could have eaten 50 of those sandwiches in one sitting.
