Sweet and Salty Strawberry Ricotta Bites
Can’t stop popping these tasty bites in my mouth. And the best part? They are pretty much guilt free!
Strawberries are in season and they should be celebrated for their beautiful color and sweet flavors. I love their natural sweetness and how they seem to pair so well with everything! I’ve been putting them in my yogurt, cereal, on salads and as you can see, on crackers too. For this quick and easy sweet and salty strawberry ricotta bite recipe, I’m using Van’s Simply Delicious® The Perfect 10 Gluten Free Crackers. I never expected to fall in love with gluten free crackers but these ones are truly delicious! I love how light they are and, texture wise, may just be the crispiest crackers I’ve ever had. I thought they would make a great vehicle to pair with creamy part-skimmed ricotta to keep these hors d’oeuvres size bites crispy, longer. I bought mine at Target for just $2.99 which is considered a bargain here in NYC – especially when it comes to foods that are wholesome and nutritious!
The recipe is very simple and takes less than 10 minutes to make. It’s completely gluten free and tastes like a salty and sweet dessert you would find in an Italian bakery. I tried different combinations of fruit and even made a test version of a Mexican nacho style cracker. But the simplicity and freshness of ingredients this sweet and salty ricotta bite recipe offered was impossible to beat. Ricotta, basil, strawberry and honey are a classic flavor combination not to be messed with. But adding a touch of salty and crunch did bring a whole new layer of yum to it!
Serve these light ricotta bites on a white marble or wooden cheese tray for an elegant presentation and pair them with a light sparkling drink. Yum!

- 1/3 cup part-skimmed ricotta cheese
- 10 strawberries (halved)
- 10 basil leaves (chopped)
- balsamic vinegar (for drizzling)
- honey (for drizzling)
- ground black pepper (for seasoning)
- Lay crackers on a serving tray and top each one with about 1 1/2 teaspoon of part-skimmed ricotta cheese.
- Drizzle a little balsamic vinegar and top with a piece of basil.
- Top with half a strawberry and finish with a drizzle of honey.
- Sprinkle a little ground black pepper for a dramatic effect. Serve.
