Non Dairy Chia Seed Panna Cotta

This little chia seed panna cotta invention is something I tasted a few months back while I was on set filming a TV commercial. Served in clear a plastic cup with a bright red strawberry on top, I couldn’t get over how lovely a combination the crunchy chia seeds made with the creamy vanilla pudding like texture. It wasn’t too sweet but sweet enough to satiate that gigantic sweet tooth of mine. That’s the thing about being on set: the hours are long – up to 16 hours sometimes – so you can’t eat too much carbs or sugar otherwise you will crash in the middle of the afternoon. Preserving energy as well as finding ways to boost it becomes a priority.
Food blogging can also be draining for the mind and body. I often work 14 hour days shooting dishes, cleaning up pictures, planning menus, creating recipes, nutritional labels and being active on social media. This can take a toll on my energy levels which is why I took the idea from set and made myself non dairy chia see panna cotta at home.
Okay, first of all, they are so easy to make! You only need 15 minutes and 4 ingredients; chia seeds, gelatin, a banana or a few strawberries and a bottle of 1915 Bolthouse Farms™ Organic Protein Beverage. There are three flavors to choose from – coffee, chocolate and vanilla. The vanilla flavor is so good on its own I carry one in my purse whenever I have a busy day running errands to keep my energy up.
I have paired chocolate and coffee with banana, and vanilla with strawberries for this panna cotta recipe, but you can easily come up your own flavor combination. Ingredients
- 354 mililiter 1915 Bolthouse Farms™ organic protein drink (vanilla, chocolate or coffee)
- 1 banana (finely chopped (to pair with chocolate or coffee flavor))
- 4 medium strawberries (finely chopped (to pair with vanilla flavor))
- 6 tablespoons chia seeds
- 1 1/2 teaspoon gelatin
- 1 tablespoon boiling water
Instructions
- In a mixing bowl, add protein drink with chia seeds and stir well to separate the seeds.
- Add banana or strawberries, depending on what flavor your have chosen, and stir well.
- Mix gelatin with boiling water and mix well until gelatin has dissolved. Add to the the protein drink mix.
- Pour the mixture into muffins tins or small cups and refrigerate for 6-8 hours.
- Using a paring knife, gently run it along the edge of each panna cotta. Over a large plate, flip the muffin tin over and gently shake to make the panna cotta fall from its mold.
- Serve with more fruit on top or enjoy it just like that!
Notes
This non dairy panna cotta recipe will keep in the fridge for about 5-7 days.

I don’t have this protein drinks but I can make my own chocolate, I’m allergic to cane sugar so I’ll be substituting that with palm sugar. This is a good post! I usually add chia seeds to water, let it soak over night, and then pour sugar free fruit juice, which still has fructose, but at least in not allergic to it. Thanks!
