Ingredients

  • 2 potatoes (such as Yukon gold)
  • 1 small onion (sliced into half moons)
  • 3 stalks scallions (roughly chopped)
  • 4 tablespoons vegetable oil
  • 2 slices bacon (chopped bite size)
  • 1 tablespoon butter
  • 1 1/2 teaspoon soy sauce
  • freshly ground black pepper (to taste)

Instructions

  1. Peel and cut the potatoes into medium size sticks (about the size of your finger). Add 3 tablespoons of oil to a medium/large size pan (about 1/4 of an inch). Wait until the oil is very hot (about 320 degrees) and add the potatoes. Fry each side for about 3-4 minutes, until they’re golden brown. Take the potatoes out and rest them on paper towels to remove excess oil.
  2. Cook on each side for about 3-4 minutes, until golden brown.
  3. In another medium size pan over medium heat, add 1 tbsp oil. Add the onions and scallions, and cook for 3 minutes. Add the bacon and cook for 3 minutes.
  4. Add the potatoes, cook for a minutes and turn off the heat. Add butter, toss and plate. Pour soy sauce over the potatoes, season with freshly ground black pepper and serve.
