Easy Teeny Blizzards
I have a weakness for ice cream. Whether it’s chocolate or vanilla doesn’t matter to me – I love ice cream in any shape, flavor or form. And I like it even better when it’s healthier because it means I won’t feel major guilt once it’s ingested. Especially since I have been indulging in frozen treats almost daily this summer, which is why I decided to create my own special snacks. Meet my easy teeny blizzards! They are low in calories and fat and contain ground flaxseed, nuts and fruit. And they are delicious!
This recipe came into mind after seeing Weight Watchers’ Salted Caramel and Mint Chocolate Ice Cream Bars during one of my weekly trips at Stop and Shop ( Stop by your local Stop and Shop between 9/1/16 – 9/28/16 and when you buy any (5) FIVE participating Weight Watchers products (excluding Heinz SmartOnes & Meeting Room Products) you’ll Save $3.00 instantly while supplies last!) Since I generally prefer ice cream cups over bars (the feel of wooden popsicle sticks makes me cringe), I thought it would be fun to create a healthier version of the classic blizzard. I love Weight Watchers snack products because they deliver on flavor and have always done a great job at satisfying my sweet tooth.
Only 5 ingredients are needed to create these teeny blizzards. If you like pure sweetness, the salted caramel flavor will totally hit the spot with its banana and crunchy walnut toppings. If you prefer something refreshing with a little bitterness, the dark chocolate and mint flavor will be your best friend. This one comes with fresh strawberries and shaved almonds and looks so pretty!
These mini blizzards are the perfect little snack to serve at a birthday party, baby shower or summer barbecue. They also make a healthier option to serve your kids when they crave junk food.
Each teeny blizzard contains approximately 285 calories and 4 grams of saturated fat.

Ingredients
Mint chocolate blizzards
- 6 Weight Watchers Dark Chocolate Mint Ice Cream Bars
- 1 1/2 tablespoon ground flaxseed
- 2 tablespoons 1% milk
- 1 tablespoon shaved almonds
- 3 strawberries (diced)
Salted caramel blizzards
- 4 Weight Watchers Snack Size Salted Caramel Ice Cream Bars
- 1 1/2 tablespoon ground flaxseed
- 2 tablespoons 1% milk
- 2 tablespoon chopped walnut
- 1/3 banana (peeled and chopped into small pieces)
Instructions
- Put mint chocolate or salted caramel ice cream bars, ground flaxseed and milk in a blender and blend until texture is smooth but still thick (over blending will make the ice cream melt).
- Transfer ice cream mixture into small bowls or jars and cover with wrap or lid. Freeze for 30 minutes.
- Take the mini blizzards out and add toppings. Stir to blend the nuts and fruit together with the ice cream. Cover and freeze for 1 hour. Serve with more toppings.
Notes
The texture of these teeny blizzards will solidify if left in the freezer for too long. They will turn into hard ice cream so it’s best to omit the toppings since the fruits will get frozen and hard to eat.
