Fresh fruit yogurt parfait
This is a really easy, delicious and healthy breakfast recipe! This fresh fruit yogurt parfait takes less than 15 minutes to make and can serve 4 to 8 people, depending on the size of the dish/cup you’ll be using. You can also use different fruit like pineapple, blueberries and raspberries, but I personally love the combination of strawberry, kiwi and mango. The colors are vibrant and makes the parfait look so appetizing! There’s absolutely no cooking involved, just peeling and chopping (and nibbling).
The best kind of yogurt to use for this fresh fruit yogurt parfait is plain or greek yogurt. Or if you have the equipment to make your own like my cousin does, that’s even better! Using flavored yogurt is also okay but you might want to skip the honey, as it might be too sweet. For those allergic to honey, you can substitue with maple syrup or agave nectar. Eating yogurt daily is something I had to force myself to do in the beginning. I’m more of a chocolate croissant girl so switching to something sour and creamy took a while to get used to. I realized the only way I could keep eating yogurt was by adding flair to it. A fresh fruit yogurt parfait helps keep my breakfast a little sweet and fun to eat. For mothers, this parfait can also be served as a healthy dessert or as a snack idea for kids. Top it with chocolate sprinkles and they won’t know it’s good for them!
Note: I like using Chobani greek yogurt, Stonyfield Farm, or Fage yogurt (which can be found in most grocery stores). I find them to be creamier while still remaining low in fat.
